I love rhubarb... rhubarb sauce over ice cream, rhubarb cream pies, rhubarb cobblers, and this recipe:

RHUBARB TORTE

Crust:

1 cup flour
1/2 cup melted butter (or margarine if you prefer)
5 Tbsp. powdered sugar
Pinch of salt

Mix and press into bottom of a 9" X 13" cake pan. Bake at 375 degrees for 10 minutes (350 if using a glass pan).

Filling:

2 large eggs
1/4 cup flour
1-1/2 cups sugar
3/4 tsp. baking powder
Grated rind of one orange
3 cups diced rhubarb

Beat the eggs, then add sugar, orange rind, flour, baking powder and rhubarb. Mix well and pour on top of the crust. Bake 35 to 40 minutes at 375 (350 if using a glass pan).

Serve with vanilla ice cream.
