Hi, DJ, My mother cooks her cornbread this way too. She doesn't use a special recipe, in fact, she usually uses the little packets of cornbread mix. I've never done it, but I can tell you that she puts quite a bit of fat in the pan (the cornbread is really greasy), gets it pretty hot, and only makes a thin cornbread. It's kinda like a really thick cornbread pancake. She turns it with an egg turner after it's done enough on one side, to finish cooking it. Hope this helps.
