PORK CHOPS WITH AMBER RICE This is a very good and simple recipe. I also have used boneless chicken breast with this.
6 pork chops - 3/4" thick salt and pepper 1-1/2 cups cooked rice 1 cup orange juice 1 cup chicken rice soup
Brown pork chops in heavy skillet; season with salt and pepper. Place rice into 12 x 10 casserole dish. Pour orange juice over rice. Arrange browned pork chops on rice. Pour chicken soup over all. Cover and bake at 350 for 45 min. Uncover and bake for 10 min. longer.
* Good side dish is baby carrots cooked in chicken bouillon, orange juice & small amount minced onions. Cook till tender. Remove from heat, drain, & pour melted butter with honey mixed into, over top. Sprinkle with cinnamon.
