Peaches 'n Cream Muffins
Makes 8 to 10 large muffins

1 egg
1/2 cup skim milk
1/2 cup fat-free non-dairy creamer
1/4 cup vegetable oil
2 cups cake flour, sifted
1/4 cup granulated sugar
3 teaspoons baking powder
1/2 teaspoon salt
1 cup diced fresh peaches (peeled & pitted)

Preheat oven to 400 degrees. Beat 1 egg, mix in 1/2 cup milk, 1/2 cup non-dairy creamer and 1/4 cup oil. In a separate bowl, combine the flour, sugar, baking powder and salt. Make a well in the dry ingredients and pour liquid ingredients into well; mix just until moistened. Stir in the diced peaches. Spray muffin pan with vegetable cooking spray. Fill each muffin cup about 2/3 full. Bake 20 to 25 minutes. Remove from pan and let cool.
