I think this is the one of tried years ago, I'm not a cookie baker.
Fruit Cake Cookies
Cream together:
2 sticks (1 cup) oleo (margarine), softened
1 1/2 cups brown sugar
Beat in, one at a time:
4 eggs
Mix in:
2 tbsp. rum flavoring
1 tbsp. vanilla extract
Combine:
6 cups chopped pecans
1 lb. candied cherries, chopped
1 lb. candied pineapple, chopped
1 lb. raisins, chopped
Dredge fruit mixture in small amount of:
3 1/2 cups flour
To the rest of the flour add:
3 tsp. soda
1 tsp. cinnamon
1 tsp. nutmeg
1 tsp. cloves
1 tsp. salt.
Mix well. Stir the flour mixture into the wet ingredients and mix well. Add the pecans and fruit and mix well. Drop by teaspoon full on an ungreased cookie sheet, bake for 12 minutes at 350 degrees. |
