LIVER SAUSAGE 1 beef tongue 1 beef heart 9 lb. pork roast (pork butt roasts are good) Cover with water and boil until meat falls off bones.
3 lbs. liver Cover and boil, cook so no blood comes out. (Save pork broth to moisten meat mixture).
3 chopped onions, fry in fat from pork broth 1 1/2 c. rice, boil in water until done Run all above through grinder. Add seasoning:
2 tbsp. salt or so 4 tbsp. sage 2 tsp. pepper
I hope this is the recipe. There are no further instructions but, as you can see, it does not mention the casings, therefore, it sounds similar to what you are looking for.
