Is it possible your Mom just made a basic bread pudding and used the biscuits instead of bread? I have seen several biscuit pudding recipes that are served with a chocolate sauce, but none with the chocolate in them.
It's such a shame these old recipes get lost. My Dad was raised in the Missouri Ozarks and I think the version he grew up with is called Chocolate Gravy and served over biscuits. I did a search and found a biscuit pudding recipe that I wondered if you could just add cocoa and come up with something close. Of course, it isn't your mother's recipe, but perhaps you can experiment a little.
I am also posting a recipe for chocolate gravy. Good luck in your search and if you find one, please share, perhaps we can save some of these recipes from oblivion.
