Strawberry Spice Cake
1 1/2 cups sugar
1/4 cup margarine
2 eggs
1 egg white
2 1/4 cups flour
3/4 tsp baking powder
3/4 tsp baking soda
3/4 tsp cinnamon
1/8 tsp black pepper
1/8 tsp cloves
3/4 cup chopped strawberries (fresh or frozen)
3/4 cup lowfat buttermilk
1 1/2 tsp vanilla
Beat sugar and butter, add eggs and egg white, beating well. Combine flour, baking powder, baking soda and spices. Mash strawberries and combine with buttermilk and vanilla. Add flour mixture to sugar mixture alternately with strawberry mixture. Pour into greased 13x9 pan and bake at 350 degrees for 30 minutes. Cool and frost.
Cream Cheese Frosting:
2 tsp margarine
4 oz fat free cream cheese
1/4 tsp lemon juice
3 cups powdered sugar
1/4 tsp vanilla
Beat together until smooth.
