Penny, I have made these treats for years for my children and have found that first of all, don't use a rich pastry crust (may use leftover pie crust) and don't roll too thin.
Cover the rolled out dough with softened butter.
Make your mixture of sugar and cinnamon to taste, maybe 1 part cinnamon to 3 or 4 parts sugar, spread on buttered dough.
Roll like a jelly roll and slice abut 1/4 inch thick. Place on a greased cookie sheet.
Bake at 375 degrees F till browned. Enjoy
