Treasure Cake
1 cup butter (2 sticks) 1 cup sugar 2 eggs 2 teaspoons vanilla 1 cup sour cream 1/8 teaspoon salt 2 cups Swans cake flour (or 1 cup regular flour) 1 teaspoon baking powder 1 teaspoon baking soda
Topping:
1/2 cup dark brown sugar 1/4 cup white sugar 1 teaspoon cinnamon 1 cup chopped pecans
Cream butter and sugar. Add beaten eggs and vanilla. Sift togther flour, baking powder, salt and baking soda. Add 1/2 of flour mixture and 1/2 sour cream to batter. Beat well. Add rest of flour and sour cream to mixture. Beat well.
Grease angel food cake pan. Spread 1/2 of batter in pan, add 1/2 of topping. Add rest of batter and topping. Bake at 350 degrees for 45 - 50 mins.
**Note: Make sure you use fresh cake flour and fresh baking powder. Great coffee cake for brunch! |
