Genita ~ The recipe below appears close to the one you describe. You could easily add the banana extract and nuts. What do you think?
Hawaiian Delight
1 large can pineapple chunks or tidbits, drained and save the juice
2 eggs
1 tablespoon cornstarch
1/2 cup sugar
1 cup pineapple juice
2 cups Cool Whip
1 (10-ounce) package marshmallows or 1/2 16-ounce package
Beat eggs, sugar, pineapple juice and cornstarch.
Cook over low heat and bring to a boil. Be careful not to scorch. (Or use a double boiler.) Cool.
Fold in the Cool Whip, marshmallows and drained pineapple chunks or tidbits. Place into a bowl and decorate with red maraschino cherries. |
