This is a very old recipe - 30 - 40 yrs. old. I think this may be the one you are looking for: I use a glass pan.

PINEAPPLE CHEESE PIE

1 (1 lb.) can crushed pineapple
1 Tbsp. cornstarch
1 unbaked pie shell
1 (15 oz.) container Ricotta cheese
1/2 cup sugar
1/4 cup heavy (whipping) cream
2 Tbsp. butter, melted
2 large eggs
1 tsp. vanilla
1/2 tsp. salt
1/2 tsp. lemon peel (optional)
1/2 cup all-purpose flour

Combine pineapple and cornstarch in a saucepan. Cook on medium-low stirring until thick. Place on bottom of pastry (you can probably use a graham crust).

Stir the remaining ingredients together. Spread over pineapple.

Bake in preheated 400 degree F oven 10 minutes. Reduce oven temperature to 350 degrees F and continue baking 40-50 minutes or till set. Turn oven off. Let pie cool in oven (will rise, then fall).

This is a very nice recipe - I have not made in yrs. but will make very shortly. good luck - it is simple and very good!
