BISQUICK BASIC COFFEE CAKE
2 cups Bisquick baking mix
2 tablespoons sugar
3/4 cup milk
1 egg
Streusel Topping (recipe follows)
Heat oven to 400 degrees F. Grease and flour a 9x1 1/2 inch round layer cake pan.
Mix ingredients together. Beat vigorously with spoon 1/2 minute. Spread in prepared pan.
Sprinkle with Streusel Topping or other topping variation.
Bake 20 to 25 minutes.
While coffee cake tastes best fresh from the oven, it may be made ahead and cooled in the pan. Cover with foil to reheat at serving time.
For a Richer Coffee Cake:
Add 2 tablespoons more sugar and 2 tablespoons soft shortening.
STREUSEL TOPPING
1/3 cup brown sugar
1/3 cup Bisquick baking mix
1/4 cup cold butter or margarine
1/2 teaspoon ground cinnamon
Blend ingredients together with a fork until crumbly.
Makes 12 rolls
