BAKED ONIONS AND CHEESE
24 small onions (about 1 1/2 pounds)
2 tablespoons butter
2 1/2 tablespoons flour
1 1/4 cups milk
1/4 to 1/2 teaspoon salt
Few grains pepper
1 cup grated American cheese, divided use
Buttered soft bread crumbs
Cook the onions in boiling salted water until tender. Drain and place in a buttered baking dish.
Melt the butter in a double boiler, add the flour and mix well. Add the milk gradually and cook, stirring constantly until thickened. Add the salt, pepper and 1/2 cup of the cheese and stir until melted.
Pour over the onions and cover with the crumbs mixed with the remaining 1/2 cup of cheese.
Bake in a moderate oven (350 degrees F) until the cheese is melted and the mixture is heated through.
Serves 6
