SWEET POTATO HAM LOAF

2 tablespoons butter
2 tablespoons flour
1/4 teaspoon dry mustard
1 cup milk
1 teaspoon salt
1/8 teaspoon pepper
1 tablespoon chopped onion
1 cup soft bread crumbs
1 pound ground ham
1 pound ground lean pork
Fluffy mashed sweet potatoes
additional butter, melted

Melt the butter in a double boiler. Add the flour and mustard and mix well. Add the milk gradually and cook, stirring constantly until thickened. Add the salt and pepper.

Combine sauce, onion, crumbs, ham and pork and well. Pack in a buttered pan (about 4 by 9 inches).

Bake in a moderately hot oven (375 degrees F) for about 1 hour. Invert on a oven-proof platter, cover with the sweet potatoes. Brush with a little melted butter and return to oven to brown.
