CALORIE CONSCIOUS MOLDED VEGETABLE SALAD

1 (4-serving envelope) sugar-free lemon flavored gelatin
2 beef bouillon cubes
1 cup boiling water
1/4 cup imitation mayonnaise
1 tablespoon finely chopped green onion
1/3 cup finely chopped green bell pepper
1/3 cup finely chopped celery
2/3 cup shredded carrots
1/2 cup Carnation Instant Nonfat Dry Milk crystals
1/2 cup ice water
2 tablespoons lemon juice

Stir gelatin and bouillon cubes into boiling water. Beat in mayonnaise. Chill mixture until consistency of unbeaten egg whites.

Stir in vegetables. Mix instant milk crystals with ice water in small bowl. Whip until soft peaks form (3 to 4 minutes). Add lemon juice and continue beating until stiff peaks form (3 to 4 minutes longer). Fold into gelatin mixture. Pour into 5-cup mold.

Chill 2 to 3 hours before serving.

Makes 6 servings
