Hi,
The other day my Mom and I had a wonderful lunch at a local Soul Food restaurant. We ended the meal with their fabulous Coconut Layer Cake.
I would lovve to re-create this cake, it was yellow cake, 2 layers, in between was the frosting and a thin layer of lemon filling.
The frosting was definitly butter cream, maybe with a hint of cream cheese. Then it was dusted with grated coconut.
I have searched the archives at TKL with no luck. Maybe someone has this in one of their cookbooks?
