filling could be lemon curd...
and The frosting maybe cream cheese ..
I used to make coconut layer cake all the time ago but have not made one lately.
My mother used to make hers with freshly grated coconut and she would spoon some of the coconut milk over the layers for flavor as well as to make the cake moist...She frosted hers with seven minute icing and sprinkled the fresh grated coconut over it...
When I made it I use Duncan Hines yellow cake mix and make 3 layers instead of 2..I mix a small amount of sugar into milk and heat just enough to dissolve the sugar..Spoon this over the cake layers (this takes the place of the coconut milk my mom used)
and frost between and on top of the layers with seven minute frosting and lots of the coconut.
I think it would be delicious with the lemon curd between the layers and topped with seven minute frosting and lots of fresh coconut..
