This recipe, which a friend first made for me, is for a one-crust pie, too. It has a very intense apricot flavor.
Apricot Pie 1 9" pie
about 1 pound dried apricots water 1 cup sugar 1 teaspoon vanilla dash lemon juice 1 9" unbaked pie shell
Cover apricots with water and boil until soft. Drain excess liquid, then mash. Add sugar, vanilla, and lemon juice. Pour into pie shell. Bake 30 minutes at 375F degrees, until shell is golden. Serve at room temperature with sweetened whipped cream.
