Ginger Crumb Crust
1 1/4 c gingersnap crumbs 3 oz sliced crystallized ginger 2 T sugar 1/2 t ground ginger 2 T unsalted butter, melted
Preheat oven to 350 degrees with rack in the middle of the oven.
Process first four ingredients. Add butter and blend. Set aside 1/4 c crumb mixture for decorating the top of the pie. Press into a greased 9" pie pan or 8" springform. Bake crust 10 min. On separate pan or sheet of foil,bake the extra crumbs. Cool shell before filling.
