Hi, Sandi! You're smart to start thinking early about your baking, if you have freezer room. Lots of cookies freeze well. I posted a Ginger Cookie recipe (in May of 2001) that I always make ahead for Christmas. Simple spritz cookies freeze well also - decorate with colored sugars, bake, cool completely, and store in a sturdy container between wax paper layers. Just make sure your family members don't take the container out and drop it, which always seems to happen to mine...
If there is a "must have" treat that you are not sure will freeze well, make a small batch and freeze a test sample. Try it after a couple weeks, and that will tell you if you can freeze a big batch in October. Let us know what works for you!
