Lemon Bread (with blueberries)
3/4 cup margarine 1 1/2 cups sugar 3 eggs 2 1/4 cups sifted flour fresh blueberries (optional) 1/4 tsp. soda 3/4 cup buttermilk grated rind of 1 lemon 1/4 tsp. salt
Glaze: juice of 2 lemons 3/4 cup sugar
Cream margarine, sugar and eggs. Add salt and flour alternately with buttermilk and soda added. Add grated rind of 1 lemon and 3/4 cup chopped nuts. Pour in greased and floured loaf pan.
Bake at 325 degrees for 1 hour or 1 hour and 20 minutes until knife inserted comes out clean.
Punch holes in top of cake and pour glaze over little at a time while hot.
Glaze: Mix lemon juice and sugar and heat in pan until sugar dissolves.
