Hi Nancy:-) How exciting:-)!! And, how nice of you to do this for your out-of-town guests! This recipe was on (and may still be) the back of the Ocean Spray Cranberry package. I make it every year and sometimes give it as a gift. My family likes it a lot:-)
Cranberry Fruit-Nut Bread
2 c. all-purpose flour 1 c. sugar 1 1/2 tsp. baking powder 1/2 tsp. baking soda 1 tsp. salt 1/4 c. shortening 3/4 c. orange juice 1 Tbl. grated orange rind 1 egg, well beaten 1/2 c. chopped walnuts 1 - 1 1/2 c. fresh or frozen cranberries, coarsely chopped
Sift together flour, sugar, baking powder, soda and salt. Cut in shortening until mixture resembles coarse cornmeal. Combine orange juice and grated rind with well beaten egg. Pour all at once into dry ingredients, mixing just enough to dampen. Carefully fold in chopped nuts and cranberries. (If frozen cranberries are used, put through food chopper in frozen state.) Spoon into greased and floured loaf pan ( 9 X 5 X 3 inches. Spread sides and corners slightly higher than center. Bake in moderate 350 degree F oven about 1 hour - until crust is golden brown and toothpick inserted in center comes out clean. Remove from pan. Cool. Store overnight for easy slicing.
Nancy, I believe that this will make 3 of the smaller loaves. I have done it but can't remember how lomg you should bake them. It may be about the same time since the loaves are about the same depth??!? You will want to keep a close eye on the first batch to see what the correct length of time should be. If you remember, let us know what worked for time for the smaller loaves.
