I also have been looking for a pistachio muffin recipe like those inhouse bakery stores...I found this after 2 hours of looking today...Haven't tried it but looks better than all the others I have seen today. Hope this works for you too...Colleen
Pistachio Muffins
Here you go. My mom used to make these when I was a kid - back then no one ever heard of them...for some reason, everyone wants one now. Enjoy. Feel free to pass it on...makes me happy knowing my mom is still making people happy even though she isn't with me any longer.
1 pkg. (2-layer size) yellow cake mix 1 pkg. (4-serving size) JELL-O Pistachio Flavor Instant Pudding & Pie Filling 4 eggs 1-1/4 cups water 1/4 cup oil 1/2 tsp. almond extract 7 drops green food coloring (optional) powdered sugar
Heat oven to 350F. Place all ingredients except powdered sugar in large bowl. Beat with electric mixer on low speed just to moisten. Beat on medium speed 4 minutes. Pour into greased and floured muffine pan and bake until cake tester comes out clean...maybe 20 minutes. Cool completely on wire rack. Dust with powdered sugar
