Flash In The Pan Chocolate Cake Recipe from Esther Pattison
Heat oven to 350 Degrees F. In a 9-inch cake pan combine 1/3 cup cooking oil and 2 oz. unsweetened chocolate. Heat over medium heat until chococlate is melted. Cool about 5 minutes. Add the following directly into the pan:
1 cup sugar 3/4 cup water or milk 1 egg 1-1/4 cups flour 1/2 teaspoon vanilla 1/2 teaspoon salt 1/2 teaspoon baking powder
Beat with a fork until smooth and creamy about 2 minutes, occasionally scraping down sides of pan to mix in all ingredients. Sprinkle with 3/4 cup chocolate chips and 1/2 cup chopped nuts, (if desired).
Bake 30 minutes.
