I don't pretend to know exactly about the differences in the flours but my Canadian BM Manual says that Canadians use regular Flour which is all-purpose but Americans must use Bread Flour which is lighter. Hope this helps. I have used bread flour many times and the end product is lighter for sure. Best, Judy
