Hi Rick :-) I searched the internet for this recipe. What a surprise to find it on The Big Y grocery store site! Big Y is a locally, family owned grocery store chain located here in Massachusetts and in Connecticut. The good thing, though, is that I found it for you. I hope it's the one you are looking for. I think it may be the right recipe.
Come-on-Over Cake Serves 10 to 12 2 rolls Ritz style crackers, crushed 2 tsp.baking powder 1 cup chopped walnuts 4 egg whites 1 1/2 cups granulated sugar 1 tsp. vanilla 2 envelopes Dream Whip 1 (8 oz.) pkg. room temperature cream cheese 1 large can crushed pineapple well drained 1/2 cup confectioners sugar
Mix crackers, baking powder and walnuts together. Add egg whites, sugar and vanilla. Press into a buttered 9 x 13 in. pan.
Bake 40 minutes in a 300F oven. Cool completely.
Mix 2 envelopes dream whip according to package directions. Stiffly beaten. Add room temperature cream cheese, crushed pineapple and 1/2 cup confectioner's sugar. Spread on cake. Refrigerate overnight.
