Hi Shandi :-) How about Snickerdoodles? You could use margarine instead of butter. We have always loved them :-)!!

Snickerdoodles

1/2 cup butter or margarine, softened
1/2 cup shortening
1 1/2 cups sugar
2 large eggs
2 3/4 cups all purpose flour
2 tsp. cream of tartar
1 tsp. baking soda
1/4 tsp. salt
2 Tbsp. sugar
2 tsp. ground cinnamon

Heat oven to 400 degrees F.

Mix thoroughly the butter, shortening, 1 1/2 cups sugar, and the eggs. Blend in flour, cream of tartar, soda and salt. Shape dough by rounded teaspoonsful into balls. (Slightly smaller than a walnut).

Mix 2 Tbsp. sugar and the cinnamon; roll balls in mixture. Place 2 inches apart on ungreased baking sheet.

Bake 8 to 10 minutes or until set and bottoms of cookies are light brown. Immediately remove from baking sheet and cool on wire racks.

Makes about 6 dozen cookies
