Hi Mary,

Here's a recipe I thought you might want to play around with until the one you're looking for turns up. I haven't tried this myself, but for an 'ambrosia' variation I would add 1/2 cup well drained crushed pineapple, 1/4-1/2 cup coconut, and maybe some maraschino cherry halves (omit the nuts if desired). This will increase the amount of batter so fill your pan(s) 2/3 and bake the remaining batter in muffin cups. If you or anyone else tries this we'd love to hear from you.

Orange Honey Bread

2/3 cup orange juice
1/4 cup grated orange peel (I would use 1 1/2 to 2 tbsp.)
3 tbsp. vegetable oil
1 cup honey
1 egg, slightly beaten
1/2 cup chopped nuts
2 1/4 cups sifted flour
1/2 tsp. baking soda
1 1/2 tsp. baking powder
1/2 tsp. salt

Mix orange juice, peel, oil, honey, egg and nuts; stir well.

Sift flour, soda, baking powder and salt together. Add to orange mixture and mix thoroughly. Pour into either 1 greased loaf pan or 3 small pans.

Bake at 350 degrees for 55-65 minutes for 1 loaf or 30-35 minutes for 3 small loaves. Remove from pan and cool on rack. Flavor and cutting improves if allowed to age a day.
