This is an awesome recipe for apple bread from my friend Heather. It is so moist and delicious- it has big chunks of apples so you know what you're eating. Really a dessert it is so good.
Apple Bread
3 eggs 2 cups sugar 1 cup vegetable oil 1 Tbsp vanilla 3 cups flour 1 tsp baking soda 1 tsp cinnamon 4 cups chopped apples Topping: 2 tbsp sugar 1/2 tsp cinnamon Preheat oven to 325. Grease and flour loaf pans (2 9-inch or 12 mini-loaf pans)
Combine the eggs, sugar, oil, and vanilla in a large bowl. In a separate bowl combine the flour, baking soda, and cinnamon. Stir this into the egg and sugar mixture. Stir in the apples.
Pour into loaf pans. Prepare topping and sprinkle over loaves.
Bake for 1 hr 10 minutes (check at 45-50 minutes for the mini-loaves). Let bread cool for 10 minutes then run a thin knife around the edges of the pans. Remove breads to a wire rack to finish cooling. Enjoy
