Buttery Apple Loaf Source: Woman's day
Cake 2 cups all purpose flour 3/4 cup granulated sugar 2 tsp baking powder 2 large eggs 1/2 tsp salt 1/2 cup butter (1 stick) melted 1/2 cup low fat (or 1%) milk
Streusel 1 stick butter, melted 1/2 cup packed light brown sugar 2 tsp cinnamon 1 cup flour
2 medium granny smith apples, peeled, halved, cored and cut in 1/2 inch dice
Preheat oven to 350 degrees. Coat a 9x5x3-inch loaf pan with non stick spray.
Streusel: Stir ingredients in a medium bowl with a fork till crumbly; set aside
Cake Stir flour, sugar, baking powder and salt in large bowl till blended.
Beat eggs in a medium bowl with a fork just to blend. Stir in butter and milk to combine. Add to flour mixture and fold with rubber spatula just till dry ingredients are moist. Spoon half the batter into pan. spread to cover bottom. Sprinkle with 1/2 the apples and 1/2 streusel. Spoon on remaining batter spreading to cover. Sprinkle with 1/2 streusel and the remaining apples and remaining streusel.
Bake one hour and 10 minutes to 20 minutes or till pick comes out clean. Cool in pan a rack 10 minutes run a knife around sides, invert cake on rack; turn streusel side up and let cool completely.
