Quick Orange Cake with Orange Glaze (using biscuit mix) Source: A&P Cookbook and Shopping Guide
2 cups biscuit mix (any commercial mix will do) 1/2 cup sugar 2 eggs 1 Tbsp grated orange rind 1/2 cup orange juice 3 Tbsp butter or margarine 1 tsp vanilla
Combine all ingredients in a mixing bowl; beat well, about 5 minutes with electric mixer.
Bake in a greased and floured 9-inch square baking pan 350 for about 30 minutes.
Orange Glaze Combine 1 1/2 cups confectioners’ sugar, 1 Tbsp grated orange rind and 2-3 Tbsp orange juice. Drizzle over warm cake.
