French Coconut Pecan Pie
2 1/4 cups sugar 2 tablespoons all-purpose flour 6 large eggs 1 cup buttermilk 8 tablespoons (1 stick) butter, melted 1 cup flaked coconut 1 cup pecans, chopped 2 unbaked eight-inch pastry shells
Heat oven to 350F
Using a medium bowl, combine sugar and flour.
Using a large bowl, whisk the eggs. Whisk flour mixture into eggs, until smooth.
Stir in buttermilk, butter, coconut and pecans. Pour into unbaked pie crusts.
Bake until center is set, about 45 minutes
