CAKE MIX COOKIES
You can make cookies from any flavor of boxed cake mix.
To 1 package (2-layer size) cake mix add:
1/2 cup oil
2 eggs, beaten
1 tablespoon water
1 to 2 teaspoons any flavor extract*
Mix well with an electric mixer**. Roll into 1-inch balls, flatten onto an ungreased cookie sheet.
Bake for 8 to 10 minutes at 350 F. When cooled, dust them with powdered sugar.
*Get creative with the flavor choices:
- 2 teaspoons of lemon extract with a yellow cake mix for Lemon Cookies.
- 2 teaspoons of vanilla extract to a white cake mix for a delicious sugar cookie.
- 2 teaspoons of mint extract and a chocolate cake mix?
- Add white chocolate chips to a strawberry cake mix for a unique result.
**This cookie dough, once mixed, can be frozen for baking later. Just roll into a "log" cover tightly with plastic wrap and then slice what you need and bake.
I often find cake mixes for as little as 75 cents each (although it's wise to stick to major brands such as Duncan Hines, Betty Crocker and Pillsbury when making this recipe). The cost of oil, eggs and extract is minimal.
