Chocolate Banana Avocado Bread Yield: one 9x5-inch loaf or 3 minis
2 eggs, beaten 3/4 cup sugar (white, brown or mixture of both) 1/2 cup vegetable oil* 2 1/4 cups flour 1 tsp. baking powder 1 tsp. baking soda 1/2 tsp. salt 1 cup mashed banana 1/2 cup mashed avocado** 1/2 tsp. lemon juice 1/2 cups chopped nuts 1/2 cup chocolate chips***
Beat together eggs, sugar, and oil.
Sift dry ingredients and add to egg mixture. Blend well.
Mash banana and avocado; add lemon juice and fold into flour mixture. Fold in nuts and chocolate chips. Pour into 1 greased loaf pans.
Bake at 350 degrees F. for 55 minutes for 9x5-inch loaf pan or 45 minutes for the mini pans, or until done.
I have made this recipe several times.
*To make it even more healthy you can omit the oil and add 1 1/2 cups ground flaxseed. You might have to lower the temperature to 325 degrees F because when you bake with flaxseed the product browns more quickly.
**If you don't have avocado in the house put in some more banana. Actually, the original recipe had all banana but when I ran out of banana once I substituted the avocado and lo and behold a new bread was born.
***For this recipe I like the milk chocolate chips.
