Good afternoon. Here is a recipe I have made in the past. It is called "PIADINE". It is an Italian word. It is a soft un-leavened bread dough. You can bake it on a pancake griddle if you wish to make a thin crust pizza like one like a cracker thinness. Or, you can bake it the customary way, in the oven. I would use "BREAD FLOUR" for a pizza. You can use ALL PURPOSE flour if you chose. You will require a slight more water if using bread flour.

"COMES NOW".

1 1/2 cups of flour
1 teaspoon salt
1 TBSP olive-oil.
1/2 cup water (COLD)

Place all in your mixer and mix for approximately 4-5 minutes. Then either add more water or flour which ever it requires till you have a viable dough mass. Mix for an additional 2 minutes. Do not mix in excess of 7 to 8 minutes total.
