I use my food processor for this recipe. I make the crust in it and then without washing the bowl out, I make the filling in it. Much less cleanup this way!
LUSCIOUS LEMON BARS From: Sophia Kogianes
FOR THE CRUST: 1 cup butter Dash of salt Grated zest of 1 or 2 lemons 1/2 cup powdered sugar 2 cups flour FOR THE FILLING: 2 cups sugar 1/4 cup flour 4 eggs, beaten 6 to 8 Tablespoons lemon juice Grated zest of 1 or 2 lemons
Preheat oven to 350 degrees F. Coat a 13x9-inch baking pan with cooking spray.
TO MAKE THE CRUST: Combine all crust ingredients in a food processor and mix well. Press into the bottom of the prepared pan.
Bake for 15 minutes. Cool slightly. Leave oven set to 350 degrees F.
TO MAKE THE FILLING: Combine flour and sugar. Mix in beaten eggs, lemon juice and zest. Pour into slightly cooled crust.
Bake for 20-25 minutes or until set. Cool.
TO SERVE: Sprinkle with powdered sugar. Cut in 1 1/2-inch squares. Store in refrigerator.
