Wild Rice Bread Recipe
2 cups water 1 cup oatmeal 1/2 cup honey or molasses 1/4 cup butter 2 1/2 tsp. salt 1/2 cup cold water 3/4 cup powdered milk 1 Tbsp. dry yeast 1/2 cup warm water 5 to 5 1/2 cups flour (can substitute up to 2 cups stoneground flour) 2 cups cooked wild rice
To 2 cups boiling water, add 1 cup oatmeal. Cook 1 min. Remove from heat. Add molasses, butter, salt, cold water, powdered milk, and cool to lukewarm. Proof yeast in 1/2 cup warm water; add to first mixture. Add 3 cups flour and beat well. Add wild rice and rest of flour to form dough. Let rest 10 minutes. Knead. Let rise until doubled. Form into 3 round loaves. Let rise until doubled. Bake 45 minutes at 350°.
