I make trifles all the time out of cake scraps from my business. To use your fruitcake in one try this combo.

Layer one: crumbled pieces of fruitcake

Layer two: mix drained crushed pineapple and coarsley chopped nuts (walnuts or pecans)

Layer three: mix cherry pudding according to directions Spoon onto trifle

Now depending on how big a trifle you want to make you can either top it off with cool whip or you can repeat the layers and then if you choose top off with cool whip. French vanilla cool whip is available this time of year and it would go great in this combo.
