Your quest will be easier if you search for "gluten free" items, which includes wheat. This board has quite a few recipes, if you enter gluten free into the "find a recipe" search area. Yeast, for the most part is for flavor in gluten free breads and so can just be eliminated from most recipes with little effect. A good gluten free cookbook is

If your daughter grew up on "regular" bread, she will need to be patient as she will need to relearn how to bake and she will have a few hockey pucks and door stops before she finds what she is happy with. It took me the better part of 2 years after finding out I had celiac (gluten allergy) before I worked it out.
