PEACH SHORTCAKE MUFFINS
FOR THE MUFFINS: 1 2/3 cups four 1/2 cup sugar 2 1/2 tsp baking powder 1/4 tsp salt 1/2 tsp ginger 6 tbsp margarine 1 cup milk 1 2/3 cups coarsely chopped peaches, or 1 (19-oz) can sliced peaches* FOR THE TOPPING: 2 Tbsp sugar 1/2 tsp cinnamon
Preheat oven to 400 degrees F. Grease 12 muffin cups.
Combine first 5 dry ingredients in large bowl. Cut in margarine with pastry blender until crumbly. Add milk and peaches, stirring just until blended. Spoon into prepared muffin cups. Sprinkle with topping mixture of sugar and cinnamon.
Bake at 400 degrees F for 20 to 25 minutes, or until set and golden.
*VARIATION: Strawberries may be substituted for the peaches.
