Kimberly, I have made the recipe below and
Sour Cream Orange Cake several times -- for birthdays!
LEMON CAKE(from "Under the Tuscany Sun")
1 cup sweet butter, creamed with
2 cups sugar
3 eggs - beat in one at a time until light
3 cups flour
1 tsp. baking powder
1/4 tsp. salt
Mix together and mix into batter alternately with:
1 cup buttermilk (or cream)
ending with flour
3 Tbsp. lemon juice
grated zest of 1 lemon - mix in last.
Pour into non-stick or buttered tube pan.
Bake at 300 degrees F for 50 minutes. Test with toothpick for doneness. Remove from pan.
Glaze with:
1/4 cup butter, softened
1 1/2 cups confectioner's sugar
3 Tbsp. lemon juice
Decorate with tiny curls of lemon peel.
