CRISP BACON MUFFINS

8 bacon slices
1 1/3 cups cake flour
1 1/2 tbsp sugar
1 tsp salt
2 1/2 tsp baking powder
1 egg
3/4 cup milk
1 tbsp bacon fat

Preheat oven to 425 degrees F. Butter 12 muffin tins.

Saute bacon until crisp, and chop fine. Reserve 1 tbsp bacon fat

Sift flour, sugar, salt and baking powder together. Add the bacon.

Mix egg, milk, and reserved 1 tbsp bacon fat, and blend into the first mixture. Pour into prepared muffin tins, one-third full.

Bake in a hot oven 425 degrees F for 15-20 minutes.

Makes 12 muffins
