FIRST PLACE BEST ZUCCHINI FRUIT BREAD
3 cups ground zucchini 1 1/2 cups sugar 1/2 cup vegetable oil 2 eggs 1 Tbsp. vanilla 2 3/4 cups flour 1 tsp. baking powder 1 tsp. baking soda 1/4 tsp. salt 1 cup chunk pineapple, drained, 1/2 cup cut up maraschino cherries 1/2 cup walnuts
Preheat oven to 325 degrees F. Grease 2 loaf pans.
Mix together zucchini, sugar, oil, eggs, and vanilla. Add flour, baking powder, baking soda, salt. Mix well then add pineapple, cherries, and walnuts. Stir together. Divide between prepared loaf pans.
Bake at 325 degrees F for 50-55 minutes. Cool and slice.
