NADINE: Good morning. Nadine, I am certain you know that it is wise not to begin your sour culture with a bleached white flour. Also do not consider employing a strong flour like HI-GLUTEN flour. Use all-purpose flour but use some light or medium rye flour as well at the beginning. Remember Nadine when feeding your culture you can add an ounce or 2 of mashed taters as well as potato water for the hydration. Remember those taters have about 1/3rd water in them in weight. Potatoes have a lot of vitamin C in them & is a good friend to sourdough cultures. Whatever you do always make notes so that you can duplicate if you found success... or to make adjustments for future starters. I hope this will get you started.
