WILD ABOUT PUMPKIN ORANGE MUFFINSWET INGREDIENTS:1 1/2 cups apple juice (or apple cider) 1 cup canned pumpkin (solid pack, not pie filling) 3/4 cup sugar 1/4 cup oil 2 eggs Grated rind of 1 orange DRY INGREDIENTS:2 cups all-purpose flour 1 tablespoon baking powder 1/2 teaspoon baking soda 1/2 teaspoon salt 1/4 teaspoon ground cinnamon 1/4 teaspoon mace 1/8 teaspoon ground cloves 1/2 cup chopped walnuts (or pecans) GARNISH: 12 walnuts, halved Preheat oven to 400 degrees F (200 degrees C) and grease muffin tin. Mix together wet ingredients in a large bowl; set aside. Combine dry ingredients in a small bowl. Gently fold the dry ingredients into the wet (larger bowl) until just mixed. Spoon into prepared pan and decorate top of each muffin with a walnut or pecan half. Bake for 20 to 25 minutes. Remove from pan and cool on rack.
