BANANA COFFEE CAKE

6 tablespoons margarine, softened
3/4 cup sugar
1 egg
1 tablespoon grated lemon peel
1 teaspoon vanilla extract
1/2 cup milk
2 1/3 cups all-purpose flour, divided use
1 tablespoon baking powder
1/4 teaspoon salt
3 large ripe Dole Bananas, sliced (3 cups)
FOR THE TOPPING:
1/3 cup packed brown sugar
3/4 teaspoon ground cinnamon
1/4 cup margarine

Preheat oven to 375 degrees F. Spoon batter into well greased 9-inch square baking pan.

Cream 6 tbsp margarine and sugar until light and fluffy, in large bowl. Beat in egg, lemon peel and vanilla until smooth. Stir in milk.

Combine 2 cups flour, baking powder and salt, in medium bowl. Stir into sugar mixture, stirring until blended. Fold in bananas. Spoon batter into well greased 9-inch square baking pan. Smooth top.

Combine brown sugar, remaining flour and cinnamon; cut 1/4 cup margarine into mixture until crumbly. Sprinkle onto batter.

Bake at 375 degrees F, 45 to 50 minutes or until wooden pick inserted comes out clean. Cool 20 minutes before cutting.
