CHEDDAR BACON MUFFINS

2 cups flour
2 tablespoons sugar
1 tablespoon baking powder
1/4 teaspoon salt
1/2 cup grated cheddar cheese
4 bacon slices, cooked and crumbled
1 egg, slightly beaten
1 cup milk
1/4 cup vegetable oil

Preheat oven to 400 degrees F. Grease muffin tin or line tin with paper cups.

In large bowl, combine flour, sugar, baking powder, salt, cheese and bacon. Blend well and make a well in center.

In another bowl, whisk together egg, milk and oil. Pour into dry ingredients and stir just until moist and lumpy. Spoon batter into prepared muffin tin. filling cups to top.

Bake in preheated oven 20 to 25 minutes.

Makes 12 muffins
