PEACH PECAN MUFFINS
FOR THE MUFFINS: 1 3/4 cups flour, divided use 1/2 cup granulated white sugar 2 tsp baking powder 2 tsp cinnamon, divided use 1/4 tsp salt 1 egg, slightly beaten 1/2 cup plus 2 tbsp butter, melted, divided use 1/2 cup milk 2 medium Fresh peaches, peeled and diced FOR THE TOPPING: 1/2 cup pecans, chopped 1/3 cup brown sugar, packed 1 tsp cinnamon
TO PREPARE THE MUFFIN BATTER: In bowl, stir together the 1 1/2 cups flour, white sugar, baking powder, 1 teaspoon cinnamon and salt.
In another bowl, mix the egg with the 1/2 cup melted butter and milk. Stir the egg mix into the flour, just until blended. Add the peaches.
TO PREPARE THE TOPPING: In a small bowl, blend the pecans with brown sugar, the remaining 1/4 cup flour, the remaining 1 teaspoon cinnamon, and remaining 2 tablespoons melted butter to make a crumbly mix.
TO PREPARE THE MUFFINS: Divide muffin batter among 12 medium sized buttered muffin tins. Top with pecan mix.
Bake at 350 degrees F for 25 minutes or until golden brown.
