PEABODY'S VANILLA MUFFINS

"The Peabody Hotel opened in Memphis in 1869 and was rebuilt in 1925."

2 cups sugar
4 eggs, beaten
4 cups flour
1 tbsp baking powder
2 cups milk
1/2 cup butter, melted
1 tbsp vanilla

Preheat oven to 400 degrees F. Grease muffin pan cups.

Combine sugar and eggs; beat until well blended; set aside.

Combine flour and baking powder. Add to sugar mix alternately with milk, beginning and ending with flour; beat after each addition. Add butter and vanilla; set aside.

Place greased muffin pans in a 400 degree F oven for 3 minutes.

Spoon batter into heated muffin pan cups; fill 2/3 full.

Bake at 400 degrees F about 20 minutes.
